chicken afritada apritada recipe

Chicken Afritada Ingredients:

  • Sliced chicken
  • Onions & Garlic
  • 200 grams Carrots & Potatoes
  • Tomato Paste
  • Red Bell Pepper
  • Green Peas
  • Chicken Broth or Chicken Cube as alternative
  • Bay leaves
  • 300 ml water
  • 1 tbsp sugar
  • 2 tbsp cooking oil
  • ground pepper

  1. Heat the cooking oil
  2. Fry the chicken for 3 minutes on each side or until light brown
  3. Set aside for a while.
  4. Saute garlic and onion for 1 minute or until light brown
  5. Add the tomato paste
  6. Add water & stir it.
  7. Add the chicken broth or cubes & the bay leaves
  8. Add the chicken and mix it well
  9. Cover & let it boil. Simmer for 15 minutes or until meat become tender.
  10. Add the potatoes and carrots and mix it well.
  11. Simmer for 8 minutes.
  12. Add the green peas, red bell pepper, sugar and ground pepper.
  13. Simmer for 3 minutes.
